If you use Outlook desktop go to compose a new email. Along the top click "Options". There will then be a button called "Encrypt". You can then choose to encrypt this item or to encrypt it and restrict forwarding on it as well.
If you use Outlook web go to compose a new email. Along the top click "Options". There will be a orange lock icon that may have "Encrypt" below it. You can then choose to encrypt this item or to encrypt it and restrict forwarding on it as well.
